FIELD: food industry.
SUBSTANCE: group of inventions refers to the food industry, mainly to the production of beer and alcohol. In a shell-and-tube jet-injection apparatus having a heat exchanger-aerator, a storage tank, a branch pipe for supplying a culture liquid, a cup-shaped baffle plate with a conical projection is arranged in the storage tank. Apex of the latter is coaxial with the branch pipe for the supply of culture liquid. At the bottom of the bump, there are four holes for draining the culture liquid, located in a circle in steps of 90°, and the diameter of each hole is 10–30 % larger than the grain size of the raw material. In the method for producing beer using a shell-and-tube jet-injection apparatus, the methods: "mashing in an infusion manner", "and after filtration and leaching, boiling with hop", as well as "after cooling, cooling and aerating the beer wort" are successively carried out in a shell-and-tube jet-injection apparatus, with the addition of yeast to the beer wort after its aeration in a shell-and-tube jet-injection apparatus, and the obtained mixture of beer wort and yeast is mixed, and then sent to the fermentation stage of beer wort.
EFFECT: group of inventions provides, in the course of implementation, the attainment of a technical result consisting in increasing the service life and quality of the product obtained by intensifying the fermentation process while reducing energy consumption and simplifying the production of beer.
