FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to dairy industry. This method involves replacing 100 % of milk fat with vegetable unsaturated fat during the preparation and normalization of the mixture. Then, the mixture is homogenized, pasteurized, cooled, ripened, fermented and dehydrated. Also, the method provides the administration of phytosterols in an amount of 0.01–0.50 % and / or antioxidants in an amount of 0.001–0.1 % during the post-dehydration stage.
EFFECT: method makes it possible to obtain a product having prophylactic properties against the occurrence of gastrointestinal diseases.
