FIELD: malting industry.
SUBSTANCE: invention relates to the malting industry. In the production method of fermented malt, it is envisaged to soak the raw materials, germinate the malt, ferment and dry it. Malt mixture after fermentation with pre-ground dry fermented malt, in a ratio of 1:1, is loaded into the drying chamber; mixture is kept for 0.5–1 h at 70 °C and sent to the main stage of drying with a duration of 10–11 hours.
EFFECT: method allows to reduce the duration of the process of cooking malt, reduce heat and energy costs of production and improve the quality of the finished product.
