FIELD: invention relates to the brewing industry.
SUBSTANCE: method of preparing beer with the addition of a green hop cone includes the preparation of three malts, wort, filtration and bottling of beer, using short-growing barley malt, caramel and light malts prepared in a mini-malthouse with a sieve bottom, the preparation of wort includes crushing three malts, preparation mash, then mash and saccharify, then filter the mash, boil the wort with hops, then clarify and cool the hopped wort, then main fermentation for 5–7 days at a temperature of 14±2°C, at which the cooled wort enters the fermentation tank, liquid yeast is introduced into the cooled wort, the preparation of hop cones involves collection, calibration, freezing, in which the hop cones are sent to the chamber for freezing at a temperature of -30°C for 6 hours, then the buds are stored at a temperature of -18°C up to 24 months, while before bottling the beer, a frozen whole hop cone is placed in a bottle or jar.
EFFECT: method makes it possible to obtain beer with increased organoleptic properties, combining the characteristic aroma and hop bitterness characteristic of a malt drink, as well as increased foaming and foam stability.
