FIELD: mechanical engineering.

SUBSTANCE: mixing-whipping machine includes a housing with a mixing chamber for initial product, loading and unloading branch pipes and a rotor with whipping elements connected to a drive motor. Mixing chamber contains rows of whipping elements made on the inner surface of the all-metal stator and rows of similar whipping elements arranged between them on the outer surface of the hollow all-metal rotor. At the beginning of mixing chamber there is connection pipe with compressed air or gas feed channel. At the end of the mixing chamber or in the additional mixing device installed at the discharge branch pipe outlet there is a brine solution supply branch pipe. Cavity between the casing and outer surface of the stator forms a water jacket communicating with the supply channel and the coolant or coolant release channel. Inner cavity of rotor forms water jacket communicating with feed channel and coolant or coolant discharge channel. Method consists in that the dough mass is whipped at temperature of 18–30 °C, at rotor speed from 40 to 1,000 rpm. Compressed air or gas is fed under pressure of 0.1–0.6 MPa. Salt solution is added in an amount corresponding to the recipe. Ready dough is unloaded continuously through unloading branch pipe.

EFFECT: mixing-whipping machine is proposed.
