FIELD: coffee industry.
SUBSTANCE: group of inventions relates to coffee industry. Instant coffee contains dry coffee extract, subjected to activated carbon treatment and roasted coffee beans in a fine powder form, where the average particle size is 65 microns or less, having a degree of roasting with an index of L from 10 to 40. Ratio of roasted coffee beans in powdered fine grinding to dry coffee extract is from 1 to 25 wt. %. Instant coffee has a weight ratio of acetic acid (B) to malic acid (A) [(B) / (A)] from 1.4 to 2.9, the weight ratio of malic acid (A) to chlorogenic acid (D) – [(A) / (D)] from 0.05 to 0.20, the weight ratio of acetic acid (B) to chlorogenic acid (D) – [(B) / (D)] from 0.01 to 0.25, caffeine content (E) from 0.01 to 5 wt. %, the weight ratio of caffeine (E) to chlorogenic acid (D) – [(E)/(D)] from 0.001 to 0.48 and the content of cellulose (C) from 0.001 to 0.30 wt. %. Method of improving the acidity of instant coffee involves mixing a dry coffee extract, subjected to treatment with activated carbon, and roasted coffee beans in finely ground powder form, having a roast degree with the index L, where the L value is from 10 to 40 and the weight ratio of components A to E indicated above.
EFFECT: group of inventions provides instant coffee rich in slightly sour taste quality and good aroma loading the air.
