FIELD: coffee industry.
SUBSTANCE: coffee composition contains coffee bean particles in the amount of 1-50 wt.% of dry solids and soluble coffee solids in the amount of 50-99 wt.% of dry solids. Coffee bean particles have a particle size D90 of 50 mcm or less and the oil content of 8 wt.% or less. A method for producing coffee bean particles is carried out in the following way. Oil is removed from coffee beans to obtain fat-free coffee beans, where the oil content is 6 wt.% or less. Coffee beans are ground to a particle size D90 of 50 mcm or less. The oil removal is performed before the grinding stage, or the grinding stage is performed before and/or during the oil removal stage.
EFFECT: group of inventions provides for the effective method for producing coffee bean particles having a good taste sensation, light color and without burning smell.
