FIELD: food industry.
SUBSTANCE: invention relates to food industry and is intended for production of food products, in particular potato chips. Method involves peeling potatoes, washing, slicing, blanching. Potato slices are coated with lactulose solution, previously diluted with water and mixed with starch, dill, black ground pepper, onion extract and salt, with following ratio of initial components, wt %: potatoes – 79; lactulose solution – 5; water – 10; starch – 2.5; spice mixture – 1; salt – 2.5.
EFFECT: invention allows to produce potato chips with traditional structure and taste, reduced fat content.
