SUBSTANCE: vacuum bread cooler includes vacuum chamber, moisture condenser, vacuum pump, valve system and electric contact vacuum meter. Vacuum pump performance 8–10 m3/min provides negative pressure in vacuum chamber of 0.94–0.96 kgf/cm2. Condenser of moisture ensures cooling of water supplied to it not higher than 15 °C.
EFFECT: invention ensures increase of shelf life of bread with reduction of its production time.
