FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of pectin extracts. Pectin extract from the sunflower blossom clusters production method envisages raw materials grinding, purification, extraction of the prepared raw material with addition of acid, separation of the liquid phase. Raw material purification from ballast substances with respect to pectin is carried out by staged treatment. At first step, treated with 70 % ethyl alcohol at temperature of 50–60 °C for 10–20 minutes, at the second stage, washing with hot water with temperature of 80–90 °C is carried out for 5–10 minutes, at the third treatment with 12 % sodium chloride solution at 75 °C for 5–15 minutes and at the last stage is performed with washing with water with temperature of 80–90 °C for 5–10 minutes. Further, the material is subjected to hydrolysis-extraction with 0.5 % solution of orthophosphoric acid at a ratio of solid and liquid phase of 1:15 during 2 hours with periodic stirring. Method then includes extraction of pro-hydrolyzed raw material and production of pectin extract.
EFFECT: invention allows to produce pectin extract of food purpose, purified from ballast substances with respect to pectin.
