FIELD: food industry.

SUBSTANCE: inventions relate to brewing industry, namely – to means and methods of fermentation process intensification. Disclosed is a method of producing a mineral additive for beer yeast, involving preparation of a Zn2+ biosorbent based on residual brewer's yeast. Residual brewer's yeast is washed with water, followed by autolysis 5–10 % solution of NaCl and ethyl alcohol with concentration of more than 90 %, by way of yeast holding at temperature of 45–55 °C, for 20–36 hours while stirring, with further washing of yeast with water and exposure to MEC preparation based on cellulase and pectolytic enzymes at 35–45 °C for 1.5–2.5 hours in amount of 45–60 mg per 1 dm3 yeast suspension, and proteolytic enzymes at temperature of 47–63 °C for 1.5–3.0 hours in amount of 15–25 mg per 1 dm3 suspension. Further, centrifugation, drying of the yeast suspension and grinding are performed. Then one performs malt spent grains extract, for this purpose extraction Zn2+ 0.07–0.15 % solution of succinic acid with pH=6.2–6.7 in ratio of 5:4–6 to weight of grains; after which the extract is filtered, pH of the extract is then brought to 8.7–9.3. Then, powder of dried yeast suspension is added to the extract in amount of 330–350 g per 1 hl of extract; after which mass is held at temperature of 20–2 6°C for 20–30 hours. Obtained mixture is filtered to obtain a mineral additive which is added to the stream of hopped wort fed for fermentation in amount of 1.3–1.5 g/dm3 wort.

EFFECT: obtaining a mineral additive which increases degree of fermentation of wort intensifying beer fermentation and improving its organoleptic characteristics.
