FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry, in particular to freezing fresh food products and ingredients thereof. Freezing object is placed in a medium with air temperature from −18 to −40 °C with hovering to the object of non-uniform electric or electromagnetic field with power from 0.5 to 2.5 kW. Duration of pulses cycles of action on freezing object makes 10 microseconds to 5 s, frequency of cycles - from 0.2 to 50 Hz, frequency of electromagnetic radiation ranges from 0.8 to 3.5 GHz. Plant for high-entropic freezing contains a freezing chamber capable of maintaining temperature around the frozen object within −18 °C...−40 °C, device for generation of inhomogeneous electromagnetic field, which includes at least three magnetrons installed with possibility of change of direction and intensity of radiation by movement of reflecting elements of non-homogeneous radiation generation system.
EFFECT: shorter duration of object freezing time.
