FIELD: food industry.
SUBSTANCE: invention relates to heating and optionally homogenisation and/or foaming of a fluid food substance, for example to heating milk or a milk-containing product. Heating device includes mixer (4) made with possibility of being moved into cavity (21). Method includes the following stages: introduction of a fluid food substance into cavity (21); heating of heating surface (6) and movement of agitator (4) with a certain mixer agitating speed (41, 42) to create food substance flow in cavity (21) passing along heating surface (6) and in contact therewith; and creation of perturbations of flow of food substance for interruption and / or provision of asymmetric flow of food substance in cavity (21). At the first mixing speed (41) of the mixer during the heating process, the food substance flows with the first relative local velocities differing on heating surface (6), which comprises first section (61) with minimum speed, through which food substance flows with first minimum speed of differing first relative local velocities. Mixer stirring speed (4) is changed during the heating process to the second stirring speed (42), wherein food substance flow is provided with different second relative speeds on heating surface (6), which comprises second section (62) with minimum speed, according to which food product flows with second minimum speed from differing second relative local speeds. Section (62) with second minimum speed differs from section (61) with first minimum speed.
EFFECT: technical result of the invention is prevention or slowing down of burning of fluid food substance during process of food products heating in device (20).
