FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. Disclosed is a method for production of pastilles based on berries, vegetables and fruits without using sweeteners, in which a recipe quantity of initial raw material containing at least one fruit, berry, vegetable juice and at least one fruit, berry and vegetable puree is prepared; premix is prepared by mixing initial components in a mixer; then pectin is added, after which mass with pectin is again stirred in a mixer till dry substances content in mass is 48-56%; mixed mass is filtered; then the filtered mass with constant speed is supplied for boiling in a continuous stream to dry substances content of 75-88%, wherein the mixture boiling is carried out in a vacuum apparatus at a temperature of not more than 95°C; boiled mass is subjected to molding in the form of bundles; molded bundles are cooled in two stages at different temperature, at the first stage bundles are cooled to temperature of 40-60°C, and at second cooling stage bundles are cooled to temperature of not more than 20°C, after which the finished product is cut into pastilles. Also disclosed is a pastille based on berries, vegetables and fruits without using sweeteners, which is obtained using said method and contains as raw material at least one fruit, berry, vegetable juice and at least one fruit, berry, vegetable puree, wherein content of moisture in the finished product is not more than 12%.
EFFECT: invention is aimed at reduction of labor intensity and time of product manufacturing, when producing a completely natural product based on fresh berries, vegetables and fruits, preserving all their useful and nutritive properties, ready for consumption as a light snack having high storage life.
