SUBSTANCE: invention relates to the food industry. Method for production of bakery products involves preparation of unflavored dough by mixing solutions of edible salt and sugar, water, pumpkin oil, wheat flour and grape seed flour in amount of 10-15% of the flour weight. One performs dough fermentation, handling, proofing and baking of dough pieces. To produce flour from grape kernels bones are separated from pomace, washed, dried and ground by crushing at laboratory mill to produce grits, then passed through rolls at Quadrumat Junior mill.

EFFECT: invention allows improving the ready products quality parameters, enhancing nutritive value, imparting directed preventive properties to the product, prolonging the ready products freshness terms.
