FIELD: food industry.

SUBSTANCE: invention is related to food industry, mainly bakery products production. Method provides for preparing of sponge by mixing of wheat flour, yeasts and water. Dough is prepared by adding table salt solution, water, wheat flour and granular extract of grapes refuse in quantity of 0.5-0.8% of flour weight to sponge and kneading. After that dough fermentation, handling, proving is conducted and dough pieces are baked. Grapes refuses with humidity 52-56% are minced, extracted by 10-40% solution of ethyl alcohol using ultrasound, filtered, concentrated at 45-55°C during 3-3.5 hours and frozen to obtain granular extract of grapes refuses Freeze drying of frozen extract is performed to moisture content of 7-9%. After that frozen extract is granulated with cornstarch.

EFFECT: properties of quality of ready-made products increase, as well as dates of freshness retention.
