FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry, to production of marmalade of functional purpose. One proposes a method for apple marmalade production enriched with biologically active substances of Rhodiola rosea and spiny eleutherococcus, including raw material preparation for production, preparation of a fruit-and-sugar mixture which contains fruit puree, sugar, agar-agar dissolved in water, marmalade mass cooking, cooling, addition of citric acid, herbs concentrates, the ready mass is dispensed and dried. Apple puree is used as the main component of the fruit puree, and concentrate of spiny eleutherococcus and Rhodiola rosea concentrate are used as concentrates of herbs, with the following ratio of initial components, wt%: apple puree - 59.0-61.0; sugar 28.0-30.0; agar-agar 1.3-1.5; citric acid 0.9-1.0; spittle eleutherococcus concentrate 0.35; Rhodiola rosea concentrate 0.15, drinking water 8.0.
EFFECT: invention allows producing ready marmalade of functional purpose, increased biological and nutritive value, due to addition of medicinal plants concentrates after boiling marmalade mass, as well as avoiding the presence of artificial flavoring agents and dyes in the formula.
