FIELD: meat processing industry.

SUBSTANCE: invention relates to production of smoked-boiled horse and foal. For preparation of "Mezhegesky horse and foal meat", hol ete—pulp taken from bladed and subscapular parts, cleaned from tendons and coarse films, prepared stock of foals is syruped with brine with density of 1.0923 g/cm3 in amount of 8–12 % of weight of raw material. After syringing articles of horse and foal are laid in containers and poured with brine with density of 1.1 g/cm3 in amount of 40–50 % of weight of raw material and held for 3–4 days at temperature 2–4 °C. After that raw materials are taken out of brine and soaked in water with temperature of 20–30 °C and laid in one row on shelves for water flowing for 1 hour. Preparation for heat treatment involves the following operations: the flesh taken from the blade and subscapular portions is cut into plates, rubbed with pepper and garlic, preliminarily milled on a cutter or mincer to 2–3 mm, is stuffed into a net or a bluish or wrapped in cellophane and tied with cord 2 times along and through each 6–8 cm across with a loop for hanging. Smoked-cooked products from foal are hung on frames and sealed into primary smoked smoking chambers at temperature of 80–100 °C for 1–4 hours, after smoking cooked steam at temperature of 80–85 °C. The total duration of the cooking is determined on basis of 55 minutes per 1 kg of the product weight.

EFFECT: higher taste quality, nutritive and biological value of smoked-cooked product of horse or foal meat.
