Proposed a Bifidobacterium strain Bifidobacterium bifidum 791-BL, deposited in the State Research Institute of Genetics and Selection of Industrial Microorganisms RNCIM FSUE under registration number As-203, Bifidobacterium strain Bifidobacterium bifidum V79M-BL, deposited in the State Research Institute of Genetics and Selection of Industrial Microorganisms RNCIM FSUE under registration number As-2037, Bifidobacterium strain Bifidobacterium adolescentis G 7513-BL, deposited in the State Research Institute of Genetics and Selection of Industrial Microorganisms RNCIM FSUE under registration number As-2038, , Bifidobacterium strain Bifidobacterium infantis 73-15-BL, deposited in the State Research Institute of Genetics and Selection of Industrial Microorganisms RNCIM FSUE under registration number As-2039, and Bifidobacterium strain Bifidobacterium breve 79-119-BL, used for the preparation of bifidus-containing products, deposited in the State Research Institute of Genetics and Selection of Industrial Microorganisms RNCIM FSUE under registration number As-2036. Also proposed is a consortium used for the preparation of bifid-containing products and containing these strains. These strains are able to actively accumulate microbial biomass on various nutrient media to high concentrations, have a high antagonistic activity against the main test cultures that cause food poisoning, and also have a high superoxide dismutase activity with a pronounced antioxidant activity. The superoxide dismutase activity of the strains is at least 37 units/mg of protein in the microbial mass.
