FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry. A gluten-free dry mixture for the production of gluten-free pancakes/wheat cakes and a method for the production of gluten-free pancakes/wheat cakes using a gluten-free mixture are proposed. Gluten-free dry mixture contains corn flour, amaranth flour, apple powder, a powder selected from a group containing pumpkin, beet, cranberry powders, granulated white granulated sugar, table salt, citric acid, baking soda. The initial components are taken in a certain ratio. In the method for producing gluten-free pancakes/wheat cakes, a chicken egg is added to a one-hundred-gram portion of the gluten-free mixture and mixed for 3-5 minutes, then pancakes/wheat cakes are baked in a frying pan for 1-2 minutes at a temperature of 90°C.
EFFECT: group of inventions makes it possible to improve the quality indicators and the nutritional value of pancakes/wheat cakes.
