FIELD: meat industry.
SUBSTANCE: invention relates to the meat industry, namely to the preparation of functional sausage products. The method provides for cutting, deboning and veining of raw materials, grinding, salt pickling, preparing minced meat, forming sausage loaves, binding, sedimentation and heat treatment of loaves. At the stage of minced meat preparation, a hydrated biologically active supplement is added from a mixture of wild plants of esparcet and clover in a ratio of 1:1. The quantitative ratio of the initial components of the sausage product is selected.
EFFECT: eating such functional cooked sausages can provide homeostasis of the body.
