FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the production of sausages, frankfurters, bratwurst, minced meat for pate, dumplings and cutlets. The method includes cutting, deboning and grinding of meat raw materials, the introduction of salting ingredients, spices, protein-containing additives, homogenization, preparation and molding of minced meat with subsequent heat treatment. As a protein-containing additive, Hermetia illucens larvae dried to a moisture content of 8-12% are used, which are in the prepupa stage, grown on a substrate fermented with lactic acid bacteria.
EFFECT: production of sausage goods with high taste qualities, biological and nutritional value, balanced in amino acid composition is ensured.
