As a protein-containing additive, Hermetia illucens larvae dried to a moisture content of 8-12% are used, which are in the prepupa stage, grown on a substrate fermented with lactic acid bacteria.

EFFECT: production of sausage goods with high taste qualities, biological and nutritional value, balanced in amino acid composition is ensured.
