FIELD: meat processing industry.
SUBSTANCE: invention relates to meat-processing industry and may be used for production of boiled sausages of pork. Invention allows to produce boiled sausages with enhanced nutritive and biological value of pork, cod liver semi-product, fish protein isolate (FPI) of blue whiting due to increase of polyunsaturated fatty acids (PUFA) and complete amino acids in the nutrient composition. Safety of the ready products is ensured by using a natural food dye fermented red rice, avoiding toxic sodium nitrite without reducing the quality of the product.
EFFECT: invention allows to increase biological value of the lipid and protein component of the product, enhancement of the product safety.
