FIELD: food industry.
SUBSTANCE: disclosed technical solution relates to thermal equipment for public catering enterprises, in particular to food boilers, which can be used both independently and as part of a process line for the preparation of broths, first courses, compotes, syrups, jams, vegetables, light dough, whipped cream, side dishes, mashed potatoes, meat mince, etc. Technical result is achieved by the fact that the cooking pot, containing the cooking pot fixed in the support stands, consisting of the cooking vessel and the steam-water jacket, a cover, control panel, mixer with mixing tool, cooling and water supply system, cooking vessel and steam-water jacket are welded to the tabletop and have the same height, wherein the mixer, the drive of which is made under the bottom of the steam-water jacket, is a frame structure having a central pipe with a retainer located in the upper part of the central pipe, and a support bushing located in the lower part of the central pipe, as well as two mixing elements attached to central pipe opposite each other, where one mixing element is made U-shaped from sheet material and contains two additional vertical blades, which profiles are located at an angle to the plane of the mixing element, ends of which are attached to the upper and lower sides of the mixing element, and the other mixing element is made of trapezoidal shape from sheet material, upper and lateral sides of which are located at right angle to each other, and lower side is made at an angle relative to horizontal plane, mixing element of trapezoidal shape has two additional horizontal blades, which profiles are made at an angle to the vertical plane, where one end of each of the two additional blades is attached to the side of the mixing element, and the other end is to the surface of the central pipe, the upper and lateral sides of the two mixing elements, as well as the trapezoidal shape mixing element lower side are made in the form of blades turned to the mixing elements plane, lateral sides of two mixing elements are equipped with side scrapers located at different levels and directed in different directions, mixing element of trapezoidal shape is also equipped with lower scraper, lower and side scrapers of mixing elements, made in the form of prefabricated structures, each of which consists of a metal housing and a plastic working part, connected to each other by means of mechanical fasteners and connected to the mixing elements by means of mounting elements, the cooling system is made in the form of a pipe arranged in a steam-water jacket connected to an annular pipeline covering the outer cylindrical wall of the cooking vessel along the entire perimeter and retained around it by means of mechanical fasteners, in the annular pipeline located in the upper part of the steam-water jacket there are nozzles for supplying cooling liquid to the outer walls of the cooking vessel, inside which the thermocouple is installed, the control panel is made with a TFT-screen.
EFFECT: improvement of the cooking boiler design, which improves its operational characteristics by increasing the reliability of the device operation, convenience and safety for the life and health of the user, low (rational) consumption of tap water, increase in the list of prepared dishes with the possibility of food preparation by the product temperature, increasing the speed of product preparation, prompt consumer information on the state of the device at various stages of food preparation, technical support and equipment diagnostics.
