FIELD: dairy industry.

SUBSTANCE: method of combined infrared and convective drying is carried out as follows. Granular casein with thickness of 5–7 mm with diameter of 3–4 mm is subjected to combined drying by infrared radiation using quartz halogen lamps, radiant flux density is 2,000 W/m2, wavelength is 2.04 mcm, and hot air supply at rate of 0.6 m/s, temperature of convective air flow in range from 40 to 160 °C. Drying is carried out until casein moisture content is 12 %, drying duration is 127–437 minutes.

EFFECT: invention enables to obtain casein with high quality indices.
