FIELD: food industry; technological processes.
SUBSTANCE: invention relates to devices for drying defatted fermented milk product kashk. Infrared drying cabinet consists of a body, three sections, thermal insulation to prevent heat losses, a control panel, drying regulators, having autonomous disconnection and local use in each section, the light elements used as heating elements are light infrared radiators, nine pieces built into the upper part of each section of the three-chamber cabinet, each section has grooves for controlling the distance from the sample to infrared emitters, in the side walls of the cabinet for evacuating moisture removal there are ventilation slots, in each section there are built-in temperature sensors for preset and limit temperature setting, for monitoring of drying process there are inspection windows from heat-resistant glass. Maximum single load of cabinet is 180 pcs or 9 kg with weight of one kashk 50 g.
EFFECT: technical result is improvement of quality indicators.
