FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely, to methods for producing plant extracts with a high yield of extractive substances, usable for producing non-alcoholic beverages and juice products, as well as in the production of confectionery and bakery products. Proposed is a method for producing a St. John's wort herb extract fermented with lactic acid bacteria, wherein a mixture of St. John's wort herb pre-ground to a particle size of 100 mcm and water heated to a temperature of 85 to 90°C in a ratio of 1:20 is produced; biologically active substances are extracted by water from the ground St. John's wort herb at a temperature of 85 to 90°C for 24 hours; the resulting extract is cooled to a temperature of 32 to 34°C, followed by fermenting the extract by introducing a solution produced by adding honey in an amount of 14% to the weight of water, heated to a temperature of 40°C, and sour cream with a 10% fat content in an amount of 0.8% to the weight of the extract at a temperature of 32 to 34°C; wherein the process of fermentation continues until the values of acidity of 24.0 degrees and mass fraction of dry matter of 9.7% are achieved; followed by filtering the resulting fermented extract of St. John's wort herb and directing it for storage or dough kneading. Also proposed is a process line for the implementation of the method for producing a St. John's wort herb extract fermented with lactic acid bacteria, including a dispenser for ground St. John's wort herb; a brewing machine for conducting water extraction, with rotating screw blades and a jacket for supplying hot water at a temperature of 97 to 98°C from a container for producing hot water heated by superheated steam at a temperature of 100 to 105°C from a steam generator; a container for cooling the resulting extract to a temperature of 32 to 34°C and a tank for fermenting the extract with a stirrer, equipped with water jackets, wherein honey heated to 40°C and sour cream are supplied into said tank from a mixer in order to produce a honey-water solution; a filter for the finished product, wherein a high-temperature heat pump is provided for obtaining hot and cold heat carrier flows, consisting of a compressor, a condenser, an evaporator, and a temperature adjustment valve, operating in a closed thermodynamic cycle, wherein ozone-safe freon R 600a is used in said pump as a working body, and said freon is condensed to a condensation temperature of 125°C by compression, condensed in the condenser, and the heat carrier oil is heated by means of regenerative heat exchange to a temperature of 115°C; after throttling in a temperature adjustment valve, the freon is brought to an evaporation pressure whereat said freon boils in the evaporator at a temperature of -9°C and cools the water to a temperature of 10°C by means of heat transfer through the heat exchange surface of the evaporator, wherein one part of said water is directed to the container for cooling the extract to a temperature of 32 to 34°C, and the other part is mixed with spent hot water after the brewing machine; wherein the resulting mixture is divided into two streams, directing one of said streams into the mixer to produce a water-honey solution at a temperature of 40°C, and the other into the water jacket of the fermentation tank, and the heat carrier oil heated in the condenser is diverted into the coil of the steam generator using a high-temperature heat pump to obtain superheated steam at a temperature of 100 to 105°C; after the steam generator, the spent heat carrier oil is supplied into the condenser, forming a closed cycle; the resulting superheated steam from the steam generator is supplied into the heating jacket of the container for producing hot water at a temperature of 85 to 90°C, wherein a safety valve is triggered if the pressure of steam in the steam generator raises above the maximum permissible value.
EFFECT: increase in the quality of the resulting extract and increase in the storage life thereof.
