A method for identifying the habitat of sturgeon fish using biochemical markers is proposed, which includes the preparation of samples from caviar or muscle tissue of sturgeon fish containing fatty acids used as biochemical marker substances, the extraction of lipids from the above samples, the preparation of methyl esters of fatty acids, their subsequent gas chromatographic analysis with the measurement of the percentage of the total amount of all identified fatty acids. Threshold values ​​for the ratio of the sum of the percentages of palmitoleic acid, eicosapentaenoic acid, vaccenic acid and saturated branched acids with 15-17 carbon atoms to the sum of the percentages of oleic acid, linoleic acid and monounsaturated acids with 20-22 carbon atoms are proposed as a habitat identifier. Threshold values ​​equal to 0.45 and more are typical for fish from natural populations, and less than 0.45 - for fish from aquaculture.

EFFECT: invention can be used to control the origin of sturgeon products.
