SUBSTANCE: method for the production of bread, using sprouted wheat grain and sunflower seeds, includes soaking of unpeeled wheat grain and peeled sunflower seeds, their swelling, germination, dispersion of sprouted wheat grain, kneading of dough of dispersed sprouted wheat grain, solution of food salt, solution of granulated sugar, suspension of pressed baking yeast, drinking water, fermentation, cutting, proofing, and baking. During kneading, grain mass of dispersed sprouted wheat grain is first introduced into a kneading machine, and then the salt solution, the sugar solution, the suspension of pressed baking yeast, sprouted whole sunflower seeds are gradually added with the operating organ of the kneading machine. Kneading is carried out for 4-6 min, fermentation is carried out for 60 min, proofing is carried out for 35-40 min, baking is carried out at a temperature of 210-220°C for 35-40 min. At the same time, dough is prepared with the following recipe content of components, kg: sprouted wheat grain – 80, sprouted sunflower seeds – 20, pressed baking yeast – 4, food salt – 1.7, granulated sugar – 0.7.

EFFECT: invention allows for an increase in the quality of wheat bread due to an increase in nutritional and biological value, significant improvement of taste properties, and for an increase in a period of retention of freshness of products and expansion of the range of grain bakery products.
