SUBSTANCE: invention relates to the cheese industry of the dairy industry. The method for obtaining grilled cheese is carried out as follows. The milk of cattle is pasteurized. Normalization of cheese for grilling is carried out according to the halloumi technology by means of thermomechanical processing to obtain a mixture of calcium chloride solution, rennet and heating to 32°C for 3-5 minutes using the rotation of an automatic mixer in the MaggioPro 30.4 cheese factory with a working chamber volume of 30 l. The cheese grain is kneaded with an automatic screw of the cheese factory and kept for 15 minutes. By the end of this time, a second heat treatment is carried out by raising the temperature to 38°C for 15 minutes and maintaining a pause of 5 minutes, the resulting cheese mixture is selected with a mesh bucket, the cheese grain mass is formed with a layer of at least 6 cm. The cheese grain mass is placed in perforated plastic cheese jars, turned over every 15 minutes, the water extract is carried out to pH-6.3 until the grains self-compact with each other. After self-compacting of the cheese mass, it is laid again on the bottom of the cheese factory in the solution of the remaining whey and heating is carried out at a temperature of up to 90°C after the cheese mass rises to the surface after 30-40 minutes. Then it is collected and cooled for 10-15 s. Sprinkling with mint powder and salting the surface with dry salt on both sides are included in the cheese mass; during the ripening process of the cheese, it is pressed down to self-compact.

EFFECT: invention provides for the expansion of the range of cheeses through the use of halloumi technology for obtaining grilled cheese.
