FIELD: dairy industry.
SUBSTANCE: method for obtaining a dry fermented milk product based on a dry probiotically active biological product consists in the fact that the milk is subjected to freeze-drying, whereas during freeze-drying, the milk is subjected to freezing on the shelf of a freeze-drying unit at a temperature of minus 25-30°C for 1.5-2.0 hours, and then freeze-drying at a temperature not higher than minus 20°C and a pressure of 13-15 Pa for at least 48 hours and crushed to a particle size of 20-150 microns, whereas before drying the milk is mixed with a stabilizer in an amount of 0.1-3% selected from rice flour, microcellulose, pectin or their combinations, and then fermented with a probiotic active preparation, including BIFILACT-AD, and/or BK-Uglich-AV, and/or BK-Uglich-B, and/or BKUglich-AV, fermented at a temperature of 37 ± 2°C until reaching a pH of 4.5-4.6.
EFFECT: invention makes it possible to obtain a product containing metabiotics having a prophylactic effect similar to live probiotic cultures.
