FIELD: food industry.

SUBSTANCE: production of desserts from fruit juices. A method for producing dessert is proposed, which consists of mixing concentrated grape juice with purified drinking water, taken in an amount of 50 kg, at a ratio of 1:1, after which part of the resulting mixture in an amount of 30 kg is combined with a bulk starchy product in the form of wheat flour in an amount of 6 kg and corn starch or flour in an amount of 4 kg to obtain a suspension, load the remaining part of the mixture of grape juice with water in an amount of 70 kg into a cooker equipped with a stirrer and bring to a boil, then add the resulting suspension, followed by boiling with continuous stirring at temperature no more than 100° C for 20 minutes to eliminate the taste of raw materials in the finished product and pour the finished mixture into a disposable sterilized food container made of polypropylene with a lid and a separator insert, into which peeled, oven-dried nuts of one or different types are placed so that they do not come into contact with the finished product mixture, and close the lid.

EFFECT: increasing the shelf life of dessert while maintaining its organoleptic properties and nutrient composition due to the separation of dessert ingredients during its production; the shelf life of the resulting dessert under normal dessert storage conditions is at least 3 months.
