FIELD: food industry.

SUBSTANCE: invention relates to processed meat and fish products, namely to fish molded products such as ham, and can be used in the food industry. In a mince mixer, the filling is mixed for 2–3 minutes, the said filling consists of slices of salted fish measuring from 10 to 50 mm — 80–90%, pieces of salted pork fat up to 3 mm in size — 8–18% and spices — 2%. Next, the resulting filling is filled into a flexible shell using a vacuum syringe, after which the resulting product is treated with high pressure from 200 to 600 MPa for 15–20 minutes in a high-pressure unit.

EFFECT: invention makes it possible to obtain a high-calorie, high-quality food product with an elastic consistency, which allows, when consumed, to maintain a stable shape of portioned slices without the use of any structure-forming agents.
