FIELD: biotechnology.
SUBSTANCE: present invention relates to biotechnology and can be used in microbiological industry. Method of producing lactic acid from by-products of starch production when processing wheat grains involves growing in a fermenter biomass of lactic acid bacteria to a number of not less than 9.2 log CFU/ml in a nutrient medium under conditions of deep heterophase fermentation, while maintaining pH of 5.7–5.9. Said nutrient medium consists of by-products of starch production during processing of wheat grains, which are a mixture of pentosan-containing fraction and effluents containing starch fraction B. After that, a complex amylolytic enzyme preparation is introduced into the fermenter in amount of 0.5 to 10% of the dry substance content in the mixture of by-products of starch production during wheat grain processing. Further, biosynthesis of lactic acid is carried out until concentration of carbohydrates is reduced from 121 g/l to 3.5 g/l. After the first cycle of lactic acid biosynthesis, 90 vol.% of the culture liquid is taken from the fermenter, adding a mixture of by-products of starch production during processing of wheat grains equal to the selected amount and a complex amylolytic enzyme preparation and performing up to five repeating cycles of lactic acid biosynthesis.
EFFECT: invention enables to obtain lactic acid with output of not less than 85% of consumed carbohydrates and without adding additional growth factors, and also to increase productivity due to application of fill and draw cultivation.
