SUBSTANCE: method of the production of marshmallows is proposed, the said method includes the preparation of agar-sugar syrup, whipped protein mass, preparation of marshmallow mass by mixing agar-sugar syrup and whipped mass using a vegetable protein product, molding and structuring of the marshmallow mass, drying, sprinkling the marshmallow halves with powdered sugar and gluing them together. As a plant protein product, a protein isolate from pumpkin seeds obtained by extracting flour from pumpkin seeds, followed by precipitation and separation of the aqueous protein solution from the residual flour from pumpkin seeds is used, the said isolate is treated in two stages with an electromagnetic field of extremely low frequencies.
EFFECT: invention increases the nutritional and energy value of marshmallows.
