FIELD: food industry.
SUBSTANCE: present invention relates to dairy industry, namely to production of low-lactose dairy products. Disclosed is a method to manufacture a low-lactose milk product, involving the determination of the mass fraction of milk protein, homogenisation, pasteurisation, cooling, introduction of a preparation promoting lactose reduction, and lactose hydrolysis, and based on mass fraction of milk protein from 2.8 to 3.4 wt.% homogenisation pressure is set from 12 to 20 MPa and the higher is the mass fraction of milk protein.
EFFECT: method provides effective reduction of lactose taking into account indicators of protein content in raw material.
