FIELD: food industry.
SUBSTANCE: invention relates to methods of processing dried fruits and berries. Proposed method for production of water-glycerine extract of rowan fruits provides for extraction of vegetable raw material in form of dried rowan fruits, crushed on a knife mill to particle diameter d=1.0–1.4, extractant. Extractant is a mixture of glycerine and water taken in the following ratio of components, in % of volume: glycerine 60–75%, water 40–25%, with addition of sodium benzoate in amount of 4–7 g/l of extractant, prepared in a cooking pot with a stirrer at temperature of 70 °C for 15 minutes. Extraction is carried out at ratio of vegetal raw material/extractant from 1/20 to 1/40, at exposure to ultrasound frequency of 44 kHz with power of 90 W during 34 minutes. Then one performs filtration with the help of a drook-filter and aseptically poured into doy-pack bags with volume of 250 or 500 cm3 or glass containers with volume of 0.5 or 1 l.
EFFECT: invention is aimed at obtaining a water-glycerine extract of dried rowan fruits with high output of target compounds: anthocyanins, flavonols, hydroxycinnamic acids and carotenoids, preservation of microbiological purity of extracts during storage life of up to 12 months and reduction of process time.
