FIELD: food industry.

SUBSTANCE: invention relates to industrial production of confectionary products, namely to production of pastila with homogeneous apple paste. Disclosed is a method for the pastila production with a homogeneous apple paste, including preparation of sugar-molasses syrup, pastila mass consisting of homogeneous apple paste of small-fruited apples and egg white, with acidification with citric acid, pouring of pastila mass, structure formation of pastel mass at temperature (10±1) °C for 20–30 minutes, drying of pastila sheet at temperature (35±1) °C, cutting the pastila sheet into separate products, drying pastila at temperature of (46.5±7.5) °C for 5.0–6.0 hours, cooling the pastila, dusting the pastila with powdered sugar, at following ratio of initial components, kg per 1 ton of finished product: white sugar – 631.3–698.5, egg white – 25.5, homogeneous apple paste of small-fruited apples – 301.5–335.8, sugar powder – 46.0, molasses – 107.8, citric acid – 1.8–2.5.

EFFECT: invention provides a simplified process for the production of pastila based on a semi-finished product of small-fruited apples, without the addition of additional gelatinisers, expanded range of pastila, reduced cost and improved quality of finished products.
