FIELD: food industry.

SUBSTANCE: invention can be used in production of chopped meat and vegetable semi-products for dietary alimentation. Disclosed is a method for production of zrazy from rabbit meat, providing for preparation of recipe components, cutting and mincing meat raw materials and onions, mixing the listed components with vegetable flour, drinking water, salt, ground black hot pepper to produce a homogeneous mass of mince, molding, packing and freezing, wherein meat raw material used is rabbit meat, and vegetable flour is oat flour; to produce a homogeneous mass of mince, cooled crude rabbit fat, chicken egg, fresh garlic and turmeric are also added, while for the filling preparation blanched, chopped broccoli sprouts and champignon mushrooms cut into slices, fried in sunflower oil, are used mixed and taken at ratio of 1:1, during molding, the filling is placed on the middle of mince-shaped circles with thickness of 10 mm, the edges of which are joined, breaded in breadcrumbs and given an oval-flattened shape, with the following ratio of initial components, wt.%: rabbit meat 45.5; crude rabbit fat 5.0; oat flour 5.3; chicken egg 3.0; bulb onions 5.0; fresh garlic 1.5; broccoli sprouts 10; champignon mushrooms 10; breadcrumbs 3.0; turmeric 0.1; salt 1.0; ground black hot pepper 0.2; refined sunflower oil 2.0; drinking water—balance.

EFFECT: invention ensures expansion of the range of rabbit meat semi-products, increase of nutritive and biological value of the ready products, improvement of organoleptic indices.
