SUBSTANCE: method for production of cherry jam without kernels, characterized by the fact that prepared fruits are placed in a pulsed electromagnetic field with frequency of 2400 for 15–20 seconds ± 50 MHz, after which it is directed for cooking, which is carried out in one stage with 20-minute boiling and subsequent cooling of mass for 10 minutes by increasing the residual pressure in the vacuum apparatus with further maintenance for 2–4 hours to equalize the sugar concentration in the fruit and syrup, and the mass is packed in prepared jars, Microwave heating for 1.0 minute, sealing and sterilization in two-level high-temperature accelerated mode: , where 5 and 5 are respectively the duration of the heating stages in water with temperature of 90 °C and dimethyl sulfoxide solution with temperature of 115 °C, min; 5, 5 and 5 - respectively duration of cooling stages in water with temperatures of 85, 60 and 35 °C, min.
EFFECT: invention allows to enhance the ready product quality and reduce the technological cycle duration, as well as increase the vitamin C content in the ready product by 20%.
