FIELD: food industry.

SUBSTANCE: disclosed is a method for production of an enriched cake, according to which melange, high-sugar molasses are introduced into a beating machine and beaten until a homogeneous mass is obtained, without stopping beating, one introduces sunflower oil with addition of olive oil. Sodium carbonate and food salt are added to the whipped mass and thoroughly mixed. Then one introduces prime grade wheat flour, whole-ground wheat grain flour, pomegranate kernel flour, whey protein concentrate, raisins and kneads dough. Dough pieces are formed and baked.

EFFECT: invention allows to produce products of high quality, low sugar capacity, increased nutritive value, as well as to expand the range of flour confectionary products with addition of non-traditional type of raw materials.
