FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of flour confectionary products, namely gluten-free waffles for special purpose. Gluten-free waffles production method involves dough preparation; chicken eggs are beaten with a mixer with white sugar until a homogeneous consistency is formed; melted butter and almond milk are added and beaten. Then one adds rice flour and gluten-free universal flour consisting of linseed flour, amaranth flour, corn starch, potato starch, tapioca gum and xanthan gum, as well as food salt, baking soda and vanilla sugar, followed by stirring until a homogeneous consistency. Then one introduces banana cut into pieces, stirring until formation of a homogeneous dough, and baking gluten-free waffles in an electric waffle iron. Initial recipe components are used at the following content, wt.%: rice flour 7.0, gluten-free universal flour consisting of linseed flour, amaranth flour, corn starch, potato starch and xanthan gum 28.0, chicken eggs 3.0, melted butter 6.0, white sugar 5.0, edible salt 0.1, baking soda 0.3, vanilla sugar 0.1, banana 24.0, almond milk 26.5.
EFFECT: invention allows to produce waffles with low content of added sugar and eggs in the recipe, having increased nutritive value and functional purpose.
