SUBSTANCE: inventions group relates to coffee industry. Disclosed is a coffee beverage product containing from 1 wt.% to 25 wt.% of coffee solids; 1–11 wt.% of milk protein; 0.01–3 wt.% of galactose; 0.5–15 wt.% of galactooligosaccharide; 0.01–4.5 wt.% of lactose and 0.01–3 wt.% of glucose; all weight percentage in terms of dry substance. Additionally, one describes a method for production of such a coffee drinking product.
EFFECT: group of inventions allows to reduce the quantity of sugar in the product while replacing it with a more useful ingredient, that is galactooligosaccharide, while preserving an acceptable taste, texture and sweetness.
