FIELD: sugar beet production. SUBSTANCE: the process for producing sugar comprises boiling down massecuite and separating it into white crystalline sugar, the first and second backflows. The first backflow is diluted to 50-55% white sugar, a mixture of sodium silicate and soda is added thereto in a 1: 1 to 1: 3 ratio in an amount of 0.12-0.2% by weight of the backflow to remove calcium ions and then cationic polyelectrolyte such as poly-4-vinyl-benzyltrimethylammonium chloride in an amount of 0.01-0.02 % by weight of dry matter, the first purified backflow is then filtered and condensed to 62-65 deg C white sugar. The first and second condensed backflows are individually dried in thin-film apparatus at a temperature of 80-90 deg C to a moisture content of 1.5-3.0% . The two crystalline pastes thus obtained are compressed into briquettes followed by drying them in a hot air stream having a temperature of 75-78 deg C to a moisture content of 0.1-0.3% , and cooling. The process enables one to produce, in addition to white sugar, yellow soft sugars and to create waste-free technology. EFFECT: greater efficiency of the process.
