SUBSTANCE: invention relates to sugar industry. Disclosed is a method of producing layer-mineralized sugar, comprising a set of a mixture of effluents of first and second fillmass II in vacuum apparatus of the last crystallisation step, condensation thereof, formation of crystallisation centers, growth of crystals until ready for descent. Crystals are grown such that 2/3 of the portion of the ready fillmass III is fed for cooling, followed by centrifugation, and on remaining in vacuum apparatus 1/3 part of fillmass III crystal growth is continued, pumping up the first effluent of fillmass II to ready fillmass for descent, after which 2/3 portions of the ready-to-run fillmass are directed into a receiving mixer and centrifuged, and on the remaining part of vacuum apparatus 1/3 of the fillmass part, crystal growth is continued, pumping out the first runoff of fillmass I until ready fillmass is ready for descent, then 2/3 of the part of the ready fillmass is delivered into a receiving stirrer and centrifuged, and on remaining part of vacuum apparatus 1/3 of the fillmass part one proceeds with growth of crystals till ready for descent by pumping out the obtained syrup from the evaporator plant. Then fillmass is lowered into receiving mixer and centrifuged with separation of two effluents to produce finished product.

EFFECT: invention ensures production of sugar enriched with mineral substances.
