FIELD: production of granular caviar. SUBSTANCE: losses during screening of roe through caviar sieve are reduced by strengthening ovum membranes. Granular caviar is produced from roe membranes which are heated before screening to 60-66 C followed by washing with drinking water at a temperature not higher than 10 C. EFFECT: higher efficiency.
