FIELD: food industry. SUBSTANCE: frozen roes are defrosted on open air. Salting is carried out in brine having temperature 30-45 C within 5-10 min. Aqueous solution which contains 3-5 % NaCl, 0.01-0.35 % CaCl2 and 0.001-0.08 % calcium citrate or aqueous solution containing 3-5 % NaCl and 0.1-0.5 % CaCl2. are used as antiseptic solution. Antiseptic treatment is carried out within 3-5 min in said solution. EFFECT: improves efficiency of the method. 3 cl
