FIELD: fish industry, in particular method for storage and conveyance of ovulated sturgeon caviar.
SUBSTANCE: ovulated caviar together with internal liquid is placed in sealed container, pasteurized, cooled or frosted and stored (conveyed) in frozen or cooled state. Then frozen caviar is defrosted; container is opened and caviar is washed from internal liquid.
EFFECT: improved method for collection, storage and conveyance of ovulated caviar.
