FIELD: biotechnology, milk and medicinal industry. SUBSTANCE: for preparing of bifidobacterin or lactobacterin milk prepared for fermenting os deoxygenized, and fermenting is carried out at 35-40 C at feeding of third generation ferment to fermenter under pressure reached by excessive pressure 0.3 ati in the system of gas providing and by decreased pressure 0.5-1.0 ati into fermenter following by stirring of mixture for 10-15 min. CO2 is fed at the rate 3-5 l/min at stirring for 10-15 min at the rate 40-60 rev/min. Prepared product is cooled at rest up to 10 C for 20-30 min, and its pouring is carried out at product stirring as 1-2 rev/min. Invention ensures addition of pectin (5-6 g/l) to the parent milk prepared for fermenting. Under conditions indicated above the yield of viable bacteria and concentration of probiotic strain in product is increased up to 109 КОЕ/мл, not less.
