FIELD: food industry. SUBSTANCE: buffer salt, sugar, syrup and polyatomic alcohol (0.3-0.5% of total mixture mass) were added to the prepared jelly-forming solution. Mixture is boiled down and cooled, and then aromatic and dyeing substances and ferric chloride (0.07-0.2% of total mixture mass) were added simultaneously with citric acid. EFFECT: improved method of jelly fruit-paste candy production. 4 tbl
